To top it off, the peanut butter banana
honey muffins I like so much came from the same person, so I figured this would be another winner.

Biscuits are always handy to have on hand: alongside dinner and slathered in
honey butter, for making breakfast sandwiches (
like with these egg
muffins, cut in half), sopping up some homemade sausage gravy, or delectable desserts
like strawberry shortcake.
These breakfast
muffins may be dessert -
like in taste, but all that sweetness comes from just
honey, coconut oil, and mashed banana.
The ripe mashed banana keeps the
muffins moist without a lot of added fat and I chose to use agave nectar to sweeten them, since it's natural and the flavor is so mild that it wouldn't compete with the chocolate & banana flavor
like honey or maple syrup might.
To be honest I'm not going to lie and tell you it's healthy or anything crazy
like that, but some times (maybe a special occasion), you want a treat here and there, and I will say that it is smarter to eat a «Paleo»
muffin made with ground almond and
honey versus some cupcake you buy at Walmart that's loaded with sugar, and also contains artificial sweeteners and color additives.

muffin, I wouldn't worry about throwing off the balance — you could just use 3T or the
like of
honey in with the liquid ingredients.
Usually I use
honey to sweeten
muffins but in this case I really
like the combo of blueberries + maple syrup - much
like a blueberry pancake!
Because of the use of healthier ingredients,
like the whole wheat flour and the
honey as sweetener, you can eat these
muffins at any time during the day, including at breakfast.

They still come out fine, but they do tend to have more of a dense texture with the whole wheat flour, and the
honey makes them less sweet, more
like a healthy breakfast
muffin you wouldn't have any guilt eating every morning.
Whole cubes of pumpkin, plus rosemary and finishing salt, give this light, crumbly
muffin a range of savory flavors (and beautiful color), but if you'd
like to sweeten the dish, feel free to add an extra «squidge» or two of
honey to the batter.
If you
like muffins a touch sweeter then you can increase the
honey or maple syrup to 1/3 cup.
Do nt expect the dough to be as dense as cookie dough, and the cookies will not get hard
like regular cookies, it's more
like muffin tops:) I just cut back a little on the coconut oil to lessen the moisture, and the
honey because of all the sugar it contains and baked them 1 - 2 min longer.
I actually stick with white rice, and mainly eat things
like sweet potatoes, winter squash, and even occasional homemade
muffins or bread with
honey.
I went with the apple -
honey combo because it just felt
like the perfect way to celebrate fall in a
muffin.
These
honey lemon chia seed
muffins aren't overbearingly sweet either, which is a great option for those of you who don't
like sugar in the morning.
