Anyway, there was no real recipe, it was just more a matter of mixing together an egg, some milk, and some flour until the batter was the
right consistency, and then cooking them in a
hot, non-stick
pan (the non-stick part is important!).
I
pan fried the tofu in a touch of oil since I don't have an air fryer and it's too
hot to turn on the oven
right now, but you could use either of those if you'd like to make this recipe oil - free.
Drain the pasta in a colander and then return it
right back to the
hot pan.
Those layers need to stay layered
right before hitting that
hot,
hot pan in that
hot,
hot oven.
Anyway, the pancakes aren't really pancakes at all and I knew this
right away when I dumped the first batch into a
hot cast iron
pan.
Drizzle it with some olive oil, slice and serve
right from the
hot pan.
I may or may not have eaten one
hot right out of the
pan.
I even rotated the
pans so there were no
hot spots and checked my oven thermometer to be sure my temp was
right.
Whisk again
right before adding batter to the
hot pan.
Then I would salt it
right off the
hot pan.
If you're making the roll - ups
right away, preheat the oven to 375 °F, place the
pan (s) on a baking sheet and bake for 20 minutes, until
hot and bubbly.
