There have been a number of frozen banana «
ice cream» recipes floating around the blogosphere of late, and I wanted to toss my personal favorite
into the
mix.
I have a simple two step process for raw
ice cream making -
mix in a blender and pour
into the
ice cream maker.
-- On a lower speed, add eggs one at a time and vanilla until well incorporated — Increase
mixing speed to high and let it go for 10 minutes — the mixture will become really pale and will almost double in size — In a medium sized bowl, whisk together flour, baking powder, baking soda, and salt — When 10 minutes are up, add flour mixture slowly until just combined, about 45 - 60 seconds — Chop up and
mix together all of your baking and snack ingredients in a small bowl, and fold
into batter with a spatula until just incorporated — Using a medium - sized
ice cream scoop, portion cookie dough on parchment paper - lined cookie sheet and wrap the entire thing tightly with plastic wrap — Refrigerate for a minimum of 1 hour and up to 1 week — Heat oven to 400F and arrange cookies on cookie sheets at least 4 ″ apart — Bake 9 - 11 minutes, until they are golden in color and slightly brown along the edges — Cool the cookies completely on the sheet pan (or just eat them immediately...)

mix in a blender with coconut milk, a bit of espresso powder, sugar and vanilla extract and your
ice cream is ready to go

ice cream machine.
A tip for anyone interested: I used an
ice cream scoop to scoop out the
mix (after overnight refrigeration) onto a cookie sheet with parchment paper and cooking spray and then used wax paper to smoosh them
into patties!

If you don't have an
ice cream maker, just pour the lemon
mixer right
into a metal loaf pan and freeze it for 2 hours.
My favorite healthy late - night snack lately has been sliced bananas
mixed into light vanilla yogurt - it keeps me away from the
ice cream.
Remove from the freezer and, if needed, chop
into smaller bits and add to your favorite sweet
cream ice cream base during the last minute of
mixing, and don't let it go too long or it'll get sticky.
Once you're all finished, the homemade strawberry sauce is great
mixed into yogurt, on top of
ice cream, on toast with some butter, or with peanut butter sandwiches.
The melted chocolate that's
mixed right
into the
ice cream gives it that extra smooth mouth feel and deep, rich chocolate flavor.
Mix strained yogurt with sugar and pour

So I
mixed the brown sugar with the cinnamon and sprinkled it over the top and when the pudding cake was done and I scooped it
into serving dishes, I sprinkled butterscotch chips over the top and served with a small scoop of salted caramel

You can

into ice cream so I started with cookie dough and chocolate chips.
I really liked this
ice cream and my husband said he liked it, too, «minus the banana flavor» because he only likes bananas plain (not

When the
ice cream is frozen, drizzle the warm chocolate
into the top opening of the
ice cream machine and let it
mix until the «freckles» are fully incorporated.
If you plan to make two flavors of
ice cream, simply pop out your full freezing bowl, and place a second Cuisinart freezing bowl
into the machine to
mix your next
ice cream flavor.
Pour
ice cream mixture
into the pre-frozen freezer bowl of your Cuisinart
ice cream maker, turn it on, and let the automatic
mixing paddle do the work for you.
