I the icing tastes great, but isn't thick enough for frosting the cupcakes.

I made her cupcakes from her book for my daughter's birthday - both the chocolate and vanilla and both kinds of icing.

The icing covered 8 cupcakes and I used half the creme and about 1.5 times the amount of swerve confectioners sugar that the recipe called for in order to get a spreadable consistency.
