I let the air out of the bag and seal it, and then put it in the refrigerator over night (you can pour
ice over the top of the bag in the bucket if you don't have room in the fridge).

Try this sweet concoction as a
topping for yogurt or pancakes, or spoon some into the center
of a small melon half or
over ice cream for dessert.
Ice the
top of the Christmas cake with it, and finish it off by grating
over fresh nutmeg and decorating with whole almonds if desired.
To serve, sprinkle the coconut
over 4 serving plates, place a mango slice and a scoop
of ice cream
over the coconut, drizzle remaining sauce

top with the macadamia nuts.

I decided to add a nice small scoop

top of the cake before drizzling the Pecan Praline
topping over the whole thing... oh my, it did not disappoint!

It made an AMAZING syrup with the espresso and I spooned some
of it and the dates
over yogurt,

topping a fruit bread... Then I had to make another batch, just so I could actually blitz it into a paste like I should have to begin with!

of the sponge,
top with blobs
of lemon curd, then re-roll, dust with a little
icing sugar and serve.
