Because the straight
pulp is still a bit soft when frozen, too much alcohol will cause it not to freeze at all... so
if you do add some rum, I'd recommend using the
coconut milk and lime juice as well to make sure it turns into an ice - pop.
If you're using almond
pulp leftover from almond milk, the flour will definitely be less oily and more fibrous, kinda like
coconut flour.
I can't say for sure
if you can use
coconut pulp in this recipe, since I've never tried it myself, but I bet it would work.

pulp (Leftover from making almond milk - it should be dry and crumbly) 1 C Walnuts 1/4 C Raw cacao powder OR Cocoa powder (
if not concerned for raw status) Pinch salt 1 Recipe date paste (see below) 1/2 t vanilla 2T Melted
coconut oil
If you like, save the meat (
pulp), dehydrate and use to make homemade
coconut flour.
I suggest using a bit of that
pulp (maybe a few spoonfuls) and mix in with a cup of
coconut flour and blend to see
if it gives you the consistency you want.
