I've just started dabbling
in GF baking and this one is great because it uses ingredients I already have at home — which is a huge win in my book

in my GF baking is to add a dash of humilty — I am usually a rather proud and cavalier baker — I want great GF baked things, and I am now willing to learn!

Another commenter mentioned dryness
in gf baked goods so I doubled amount of oil / butter, and just to make sure they rose I used a whole packet of yeast and doubled the amount of sugar.
We don't use peanut butter in our house due to our son having a peanut allergy, so on a few occasions I've tried subbing Sunbutter for peanut butter
in GF recipes — including some of yours, Elana.
Get rid of Bob's and all of the others and switch to KA... they have never failed
me in the gf baked goods dept.

Yes, it's really important to me that the flours I use
in my gf baking are nutritious.
Why not just finish preparing the strawberry rice check
in the GF facility and avoid contamination with peanuts?
I use
this in my GF flour mix, works well once I found out that the amount must be reduced when compared with other flours, I suppose because this flour is denser than others.
I might have to swap
in some GF oatmeal instead.
The xanthan gum is probably not necessary, with the starches
in your GF blend.
Hi John, the «punchdown»
in the GF setting on the Zojirushi isn't really much of a punchdown, so it's fine to just use the GF setting.

in our GF menu in the form of a very good bread or flour tortilla substitute.
Still wet
in my GF toaster side, fall apart in a sandwich.
This recipe can easily be made vegan / dairy - free, gluten - free (using rice processed
in a GF facility,) and allergen - free by selecting from the substitutes.

Elana's use of blanched almond flour (not to be confused with almond meal, delicious but coarser) intrigues me because Elana uses it as a stand - alone GF flour, instead of flour mixes I often find
in GF recipes, which require buying several different flours.
