Hey Pauline, if you use an angel food cake
pan you will have too much batter and it will overflow, the recipe would probably make 2 cakes
in angel food
pans or make a dozen
muffins with excess batter.
I'm sure you could plop some peanut butter
in the middle of each one but you'll wind up
with more
muffins (and therefore you'll need a second
pan) since the batter pretty much fills each tin to the brim as - is.
Since we're not using oil
in this recipe you'll need to line your cupcake /
muffin pans with liners.
Place cupcake liners
in muffin tin (you could also coat
with butter) and set the
pan aside.
Speaking of oil, as you know, I eat and live by an oil - free diet for the variety of benefits I've experienced from it, but sometimes, such as
in baking, there comes a need for a classic non-stick spray to coat the
pan (s)
with to give baked items, such as
muffins, that nice slightly browned exterior crust that paper liners just can't provide.
