Speaking of summer dwindling down, last weekend got so chilly that I made a
pasta dish for lunch, something I had not done
in over 6 months!
Made this tonight
for supper using penne
pasta (orzo was not
in my cupboard at home but
in the cupboard at camp) and made it an amazing vegetarian
pasta dish for dinner.
Key to me here is the fact that I used a whole grain
pasta, that there is a distinct flavor of toasted sesame oil, and that the
dish has vegetables
in it (
for those of us trying to sneak them
in wherever we can!).
~ using half veggie noodles and half
pasta for a spaghetti and meatball
dish ~ substituting plain Greek yogurt
for mayonnaise
in tuna or chicken salad sandwiches ~ baking rather than frying crab wontons ~ puréeing white beans as a base
for creamy sauces ~ adding puréed butternut squash or sweet potato to a cheese sauce ~ making your own breakfast (and other) sandwiches ~ boosting a breakfast sandwich with a vegetable or bean patty
In this
dish I just used a sprinkle of nutritional yeast over the top
for a little extra flavor — similar to the way one might use parmesan cheese flakes over a
pasta dish after it's plated.
Most of us don't much like to use the oven
in the dog days of summer, but you might want to make an exception
for bucatini alla pizzaiola, a delicious baked
pasta dish that sings all the favorite flavor notes of southern Italy.
The problem is, I also love
pasta, but those noodles always end up making the
dish too high
in Points
for me to eat it.
This
pasta dish is filled with all good things
for your heart health, and is low
in calories yet still so filling from the combination of protein from the shrimp and whole wheat
pasta along with the good fat from the avocado.
