I love switching up the ingredients I
use in the quesadilla but recently my favorite one consists of almond milk cheese, sweet potatoes, caramelized onions and GREENS!
After enjoying them as tacos, we had the leftover pork as sandwiches (topped with the slaw) and then used the remaining
pork in quesadillas (along with some fresh pineapple).
In fact, I think that the contents of the skewers would be
delicious in a quesadilla with a little mozzarella and goat cheese, or in a whole grain tortilla with some fresh greens.

To make the quesadilla even tastier, and as a way to add another heart - healthy ingredient, I made a fresh pineapple salsa to
include in the quesadilla.
I try to be versatile and let's say we're having chicken, I'll use the
leftovers in quesadillas or a casserole but at the end of the day, even I get tired of the leftovers.
So why not gussy up our favorite lunch companions with some roasted squash rouge and a little garlicky kale lipstick and put a little fancy
up in our quesadillas?
They're great at lunch —
sliced in quesadillas, pureed into soups, spiralized into wraps, and diced in salads.
I used cookie cutters to create the heart
shapes in the quesadilla at the top of the post, but of course you don't have to serve them that way.

My boys love the shredded
pork in quesadillas, in tacos, with eggs at breakfast, and my oldest has decided he now loves nachos.

I eat it this way with poached eggs on top, in pasta salads,
in quesadillas, or just as is.
In this recipe, the salad shrimp are precooked, so you're just heating them up
in the quesadilla.
Enjoy this warm salsa over tortilla chips, grilled fish, grilled chicken,
in quesadillas, over nachos, or in a taco salad.
This week I roasted a big batch of potatoes, which are great in this salad or
in quesadillas or as a side to whatever Laurel is eating.
Of course, in order to serve
this in quesadilla form, that means we'd have to not eat it all first.
I've put pumpkin in just about everything this month, but I didn't think to put
it in a quesadilla.

Black beans are my absolute favorite!!!! Putting
them in a quesadilla is an excellent idea with homemade salsa.
Have your carnitas over rice and beans, in a taco, or
in a quesadilla.
