In a saucepan, combine the puree, red chile, celery powder (celery
seed in a spice mill), black pepper.
Roast the coriander and cumin seeds for about 2 minutes in a dry skillet, and when they are cooled, grind to a fine
powder in a spice mill.
Remove them from the oven, cool, and grind them together with the ground and powdered spices
in a spice mill in small batches.
Finely grind blueberries, red pepper flakes, and a pinch of kosher
salt in spice mill or with mortar and pestle.

Combine the chiles, roasted spices, cloves, and curry
leaves in a spice mill and blend in small batches to a fine powder.
To make your own guajillo chile powder, finely grind about 6 large dried seeded guajillo
chiles in a spice mill to yield about 1/4 cup powder.
Then grind
in a spice mill or coffee grinder.
If you don't really feel like lazing it out, like me, and you want to create your own Old Bay - style spice mix, do the following: Mix 2 tablespoons celery seed, 1 teaspoon salt, 1/2 tsp dried yellow mustard seed, 1/2 tsp red pepper, 1/2 tsp black pepper, 2 dried bay leaves, 6 whole cloves, 6 allspice seeds, & 1/8 tsp cardamom seeds
in a spice mill.
Coarsely grind peppercorns, coriander, red pepper flakes, oregano, and mustard seeds
in spice mill or with mortar and pestle; set spice mixture aside.
I bought a five pack of ancho chiles and ground them down
in a spice mill.
In a spice mill / food processor, add the mushrooms and whole peppercorns and pulse until coarsely chopped.
