Due to the much higher heat capacity of soil relative to air and the thermal insulation provided by vegetation and surface soil layers, seasonal changes in soil temperature deep in the ground are much less than and lag significantly behind seasonal changes in overlying air temperature.

Due to the high specific heat of water one needs to supply the water sample with more energy in order to rise the temperature by one degree than in the case of some other material with the same mass but the lower heat capacity.

Victoria experienced supply failures in February 2000 when a heat wave swept across south eastern Australia, causing extremely high peak demand at a time when an industrial dispute had reduced available capacity by 20 % and two generating plants were unexpectedly out of service.

As it turns out this lowers the latent heat capacity so much you can't get anywhere near the efficiency of choosing a higher boiling point which was an object lesson for me in why steam engines run at very high temperatures.

As a result, it has an extraordinarily high heat capacity, and takes a very long time to fully respond to changes in temperature.

The ocean dominates the change in energy because of its large mass and high heat capacity compared to the atmosphere.
