As the
rice is
cooking, heat the chicken broth
on high
in microwave for 3 to 4 minutes or until the broth begins to bubble.
Divide the filling between two wraps, starting by placing
cooked rice on the bottom
in a small rectangular shape.
Meanwhile
on the stovetop
cook the
rice in a large saucepan of boiling water for 20 minutes or until tender but not too well
cooked
-- 1 can mixed beans (I used Scarpone's which was composed of a melange of red kidney beans, white beans, black eyed peas and chickpeas but any variety or varieties you like will work)-- 1/4 cup uncooked wild
rice,
cooked in veg stock until tender — 2 large stuffer mushrooms — 1/2 to 1 cup panko bread crumbs (I know this is quite the range but it really depends
on the moisture content of your burgers — they won't hold together if they are too soupy)-- salt and pepper, to taste (I indulged
in a healthy amount of truffle salt)
Stir together the Leek Confit,
rice, broth, salt and pepper
in the slow
cooker, cover it, and
cook on low for 4 hours.
In a couple hours, you've got the ultimate football party appetizer to skewer up
on toothpicks or a fusion - inspired, «take - out» take off dinner that you can serve with the slow
cooker sauce over
rice.
The first thing I will say is that this recipe does not fit
in with my usual
cooking style & the food that I usually share
on this blog for two reasons, it has loads of sugar
in it & it is made of
rice.
While the
rice is
cooking, heat 2 teaspoons of the olive oil
in a pan
on medium - high heat.
In one large pot filled with filtered water and a little salted water,
cook the
rice noodles as directed
on the packaging.
If you can't wait a couple days to sprout it, you could always stir
in some
cooked wild
rice on the more al denté side.
i had the bulk of it prepped early
in the afternoon (
rice, sweet potato and dressing, chickpeas
in sauce
in a bowl ready to
cook) and when the hubs came home i fired up the grill, grabbed my cast iron skillet and
cooked the last minute fresh stuff right
on the coals and threw it all together right there!!
The
rice cooks in this «sauce» and takes
on all the flavours!
Steam the broccoli (my
rice cooker — this one
on amazon — has a steamer
on top — how handy — otherwise just quickly steam
in the microwave or any steamer you have).
The simplest
rice we would get would be
rice cooked in chicken stock and that quite rarely, maybe
on one of those days when my grandma didn't have so much time for
cooking, she did work full - time all her life after all and continued working long after she was actually retired.
