And as a vegetarian, it will be simple to exclude the chicken and use vegetable broth
in place of the chicken broth.
For a vegetarian - friendly option, replace the chicken with 3 cups sliced mushrooms (or omit it altogether), and use veggie broth

in place of andouille sausage, lower sodium canned tomatoes and

in place of white rice.
