Anthony, if you can manage to use cornstarch (just sub more cornstarch
in place of the tapioca flour), I think that will give you the best result.
Speaking of starch, you could also use potato starch
in place of the tapioca.

Tapioca is easier to find
in stores here too but I tend to order a lot
of ingredients online and the
place I buy my nuts / seeds, beans and grains has a good selection

of the oven and they are delicious!!!! I didn't have high hopes because I used canola
in place of the coconut oil and

of potato starch but these are easily the best chocolate chip cookies I've ever had and I'm not even vegan.
