Lemon juice is also acidic and can be used
in place of vinegar to make dairy - free buttermilk as well.
Sometimes I'll use sake too
in place of the vinegar or in addition to.
I made it Lemon Cake by using lemon juice
in place of vinegar, which was fine.
P.S. Don't toss the jalapeño pickling liquid: use the flavorful brine
in place of vinegar in dressings.
If you happen to have citric acid around from canning, that will work
in place of the vinegar to add that tang, too.
For those who like sweet dressings, you can add a teaspoon of honey, and you can use lemon
in place of vinegar (you'll need the juice of 1/2 to 1 lemon).

This version uses quick - cooking tenderloin
