This time of year is perfect for pumpkin recipes, but I use pumpkin all year round in many savory recipes
in place of tomato sauce.
Use 4 medium zucchini in place of the eggplant and 1 cup canned pumpkin
in place of the tomato paste and omit the water.
Serve it tossed with pasta,
in place of tomato sauce on homemade flatbread pizzas, or to add flavor to chicken, fish or potatoes.
If you want to spice things up for the grown - ups, try using hot sauce
in place of the tomato sauce, then adding a bit of ranch dressing and pieces of precooked chicken for a buffalo chicken English muffin pizza!
(Tomato paste is optional and should be left out for babies under 10 months old — using milk and butter will make this a creamy mix

Feel free to swap the cherry
tomatoes, peas, or other family - favourite veggies for the spinach, and don't hesitate to use leftover beef, pork, or cooked bacon
