I have to admit that I've been really missing my holiday sunshine this week, I love being back
in London but I've been craving warm weather, fresh
coconuts and
sweet, local mangoes all day, everyday!
Presented here as a very refreshing version of a sundae, with delicious and healthful add -
ins — desiccated
coconut, cacao nibs (which we sprinkle on everything
sweet in this house), and a drizzle of Lady Date pure date syrup, an amazing new discovery (thank you Laura for the tip).
This is where my recipe for a
sweet potato, lentil and
coconut curry comes
in.
I boiled the
sweet potatoes separately until fork - tender and
in another pan did the spices,
coconut milk, tomatoes, olives and lentils and simmered it until the lentils were cooked and then mixed
in the cooked
sweet potatoes towards the end.
I made these with oat flour instead of buckwheat,
coconut nectar instead of maple syrup and white
sweet potatoes instead of orange ones (only ones available where I was
in South Africa) and they turned out DELICIOUS.
The second time I soaked the dates
in boiling water to soften them and then I just used a blender stick to blend the dates with
sweet potato and maple syrup (much easier than a processor) I also made a budget version and used regular cocoa powder, 1/2 honey 1/2 maple syrup, no pinenuts - just 1/2 cup of
coconut flour and 1/2 cornflour, I also added chopped walnuts.
The stew is all made
in one pot, so you sautee the puree, vinegar, garlic and spices
in the pot, let it heat, and then add the
coconut milk, tomatoes, aubergine and
sweet potato into the same pot.
It's wonderfully warming and comforting, with
sweet hints of cinnamon, vanilla, nutmeg and ginger, which perfectly infuse with the pumpkin puree and
coconut sugar to create happiness
in a bowl!
Pudding 4 1/2 cups macadamia nuts — preferably soaked and dehydrated 4 1/2 tablespoons
coconut butter 6 grams or about 3/4 cup Irish moss — soaked
in hot water for 10 or more minutes and drained 3/4 cup raw agave syrup or more if you like

Just a touch of
coconut milk really does the job
in this revamped dish, and steaming plantains coaxes out its
sweet flavor and succulent texture even better than frying does.
The savory sesame and
sweet ginger flavors are always a winning combination but then add
in chili paste for a pinch of heat and
coconut aminos for a mellow sweetness and you have one delicious marinade.
Meanwhile... Make the crust: — Mix together almond and cashew meal (or whatever you have) with a mix of honey and
coconut oil (or you can just do one or the other or butter — I like the mix because then it's
sweet but not too
sweet) until it is a sticky dough consistency — Press into the pie pan and chill until you're ready for it — Pour
in the hot blueberry mixture — stir
in some fresh blueberries for fun!
