I'd made the
pita bread dough earlier
in the week and kept it
in the refrigerator (I used this recipe),
so all I needed to do was let it come to room temperature and roll it out.
I piled the ground beef and vegetables over shredded smoked gouda and lightly toasted

pita pizza
in the oven for a few minutes just
so the cheese melts.

in color than I would have liked and crispier than I wanted, but they are still
so insanely good - I can't stop eating them.

The falafel is great not
in a bowl, too,
so you could have it
in a more traditional
pita, maybe, or as part of a salad.
I toasted the roasted eggplant
in the toaster oven topped with some low sodium soy and nutritional yeast
so it formed a glaze on the eggplant and then added hummus, cucumber, and tomato
in a whole wheat
pita and had mango on the side.
