The beef, spinach and cheese mixture is stuffed
in between a flour tortilla, baked and then topped off with a super easy homemade
tzatziki sauce as a sort of healthier, more flavorful alternative to sour cream.
To assemble a gyro dog, place a sausage
in the hot dog bun and top it with
tzatziki sauce, sliced tomatoes and onions.
I love
tzatziki sauce and smothered my pita
in it (which is why you probably aren't seeing the chicken
in the photo above).
For
sauce, I use a cup of leftover
tzatziki but you can make a fresh batch
in 10 minutes.

Lately we have been eating Gyro chicken, I just use gyro spice and saute the chicken make quick
tzatziki sauce and we have it over pita or lettuce cups... talking about lettuce cups I have been putting anything and everything
in lettuce cups.
I had a
tzatziki (cucumber - yogurt)
sauce in the frig which I used as a dipping
sauce and the balance cooled off the flavorful samosa.

It's quick, easy, cheap, can be baked, packs flavor, packs quinoa, protein, savory with a hint of mint, the
tzatziki sauce can be used for countless other dishes, the pickled red onion adds a sour flavor dimension, can be made
in bulk and frozen, and is non vegan approved!
In the meantime prepare the
tzatziki sauce for the pork souvlaki.
Conventional
tzatziki sauce is made with yogurt or sour cream, and those are 2 ingredients I am not interested
in using, especially since vegan alternatives are mostly made with soy.
