I couldn't stop thinking about that
soup, so I made a
vegetarian version
in my own kitchen.
The
soup looks exactly like what I want to make but I had a question, after I read the recipe
in this post I opened
Vegetarian Cooking for Everyone (my most used cookbook) and I saw that she recommends to make the
soup pretty thin, I prefer
soups thick and I think the
soup pictured
in this post also looks on the thick side.
However,
in our family, because some of us are
vegetarians, we usually mix the basic veggies together and then mix
in the protein and
soup right on the foil.
The
soup in the photo was a variation of Deborah Madison's Red Lentil
Soup with Lime from
Vegetarian Cooking for Everyone.
This warming and budget - friendly
vegetarian soup is perfect packed
in a flask for lunch.
But it's not just for vegans or
vegetarians — nutritional yeast works
in any
soup or stew, and is wonderful on popcorn too!

So of course, on that first occasion that I was served
vegetarian black bean
soup, I thought there was some mistake and I'd just taken a bite of something that had spent hours simmering away
in some sport of meat base... or something like that.
The only things I can think of that I didn't differently: used homemade veg broth I had
in the freezer (I'm
vegetarian though my husband isn't and he thought the
soup was great) used mixed dried mushrooms (you can get a large amount from costco for not too much - I keep them on hand for all my dried mushroom needs) did a healthy glug of sherry (more than the recipe) into the mushrooms when they were done sauteeing added spinach at the end to the
soup For the dumplings, the only thing I did that was different than what many would do is use an egg from one of my hens - other than that I made them just as other people did but mine were full of flavor and could be eaten plain.
The menu guide
in the back of the magazine features a
vegetarian feast which includes the barley
soup.
