The mock mixes I found out there all were
in volume measurements.
The point of using weight measurements instead of volume measurements is due to the lack of standardization in volume containers, and the inevitable human error that leads to discrepancies
in volume measurements.

volume or the weight
measurements in your original recipe?
When I originally came up with the recipe, I measured everything
in cups, and then I weighed out those
volume measurements.
When I first created the recipe, I used
volume measurements, and to get the weights I measured out each ingredient, placed it on the scale, recorded the amount
in ounces, and then hit the kg / lb button which then gave me the weight
in grams.
You should be able to google some conversion tables from weights to
volumes for individual ingredients, but I'm sorry I did not make
volume measurements — the idea with ratios
in the ratio rally is to be able to make substitutions based on weight for the best chance of gluten free success.
The recipes are expressed
in percentages, and you can not make these blends accurately with
volume (cups, tablespoons, teaspoons)
measurements, as measuring by
volume is incredibly imprecise and each flour has a different weight /
volume.
Firstly, I was very happy to also see the ingredients described
in weight (versus
volume)

Janice, here's a video explaining why I use weight
measurements in my new recipes AND some notes on how you can convert it to
volume measurements if you wish.
Measuring the flours by weight is more accurate, and that's more important
in pie recipes than
in some other sorts of recipes, but I've included the
volume measurements too if you don't have a scale.

volume.
The reason I write recipes
in this way is that depending on where you live you may use
volume (cup)
measurements or you may weigh (grams) your ingredients.

I will retain the practice of giving
volume measurements in cups as I did previously for anyone who does not have a food scale, but know that I do suggest you get a scale (I have this one
in black) for the best results.
