For fun, I made 1 / 2 - inch truffles out of half of the mixture (and the usual 1 -
inch size out of the other half).
Not exact matches
i only used two bananas since that's all i had, and an 8 x 8
inch pan (didn't know they made that other
size), but they came
out very well.
I used a 1 -
inch round to punch
out small bite -
sized polenta rounds, but you can certainly use any
size you'd like.
Spoon
out heaping tablespoon -
sized clusters of the chocolate mixture onto a small baking sheet about 1 -
inch apart.
Remove dough from the fridge and roll dough
out on a floured flat surface to 1/8
inch (2 mm) cut with a round cookie cutter approximately 28 circles (2 1/4
inch / 6 cm
size), place 14 circles on a parchment paper lined cookie sheet, place a heaping teaspoon of apple filling on each circle, gently spread the filling, be sure not to go over the edge, cover with another circle and close the edges with a fork (I lightly wet my fingers and closed the edges).
Roll each square
out to increase the
size by about 1/2
inch circumference.
Scoop the dough
out with a medium
sized cookie scoop onto the prepared baking sheets, leaving a couple of
inches between the cookies, I managed to fit 8 on a half sheet pan.
The trick to getting an egg - like texture is to use soft tofu and to crumble it into large pieces that range from 1/4 to 1 / 2 -
inch in
size then let it dry
out on a baking sheet lined with a dish towel.
Then, after the dough rested, I called her back to roll a piece
out the final
size, which ends up being about 7
inches.
Turn dough
out onto a lightly floured surface, shape into a 7 -
inch square, then cut into 9 equal -
sized pieces.
My husband and I found
out that the vegetable
size works best and he cuts the width of the shelves the
