Like rapini and other brassicas, cabbage contains organosulfur compounds
including phenethyl isothiocyanate and sulforaphane that have been shown to have potent antioxidant and anti-tumor properties.
Researchers looked closely at the chemical composition and found hundreds of beneficial natural compounds
including polyphenols like caffeic acid
phenethyl ester, amino acids, coumarins, and even natural steroids.
