Coming back to food, as today is Meatless Monday here on Nomsies Kitchen and it is Pancake Day tomorrow here in Britain, I thought it will be timely to share a recipe for two
ingredient pancakes with you!

You may have been surprised to see that the directions call for sifting the dry
ingredients, as this isn't common
with standard
pancake recipes and more often suggested when making delicate cakes and baked goods.
So, as a protein
pancake addict, I recommend starting

ingredients, then if you want to add mashed banana, oats, or other healthy additions, get creative!
So I'll share the basic recipe
with you here and some suggested ways to play around

I am obsessed
with «protein
pancakes» but if you're going for 2
ingredients, egg beaters and a scoop of protein powder works best — I tried it
with egg whites today because my grocery store ran out of egg beaters and there is a HUGE difference in consistency.
Not sure if your
ingredients are different but I ended up
with a runny mixture that would of just turned into
pancakes!
I always make
pancakes using Kamut Wheat and I think
with this healthy
ingredient, I might just be able to get over all the sugar LOL!

So let me start this, by just sharing those 2
ingredients banana egg
pancakes with you.
Just mash overripe bananas, and mix them into a bowl
with pancake mix and a few other
ingredients that you probably already have in your pantry, fill muffin tins and bake!
This morning I only had 2 things to make breakfast
with and out of necessity, these 2
ingredient flour-less
pancakes were created.
Other
pancake ingredients include protein - filled organic eggs, warming vanilla extract, MCT - rich coconut oil or grass - fed butter packed
with butyric acid, and maple syrup for a touch of sweetness.
Savory Sweet Potato
Pancakes (Adapted from Diane Sanfilippo's Sweet Potato
Pancakes)
Ingredients: 1/2 of big sweet potatoes (about 4 cups)-- peeled and finely shredded (I used my food procesorr
with shredding disc or you can shred them manually) 4 tsp coconut flour 1 tsp salt 1 tsp black pepper 1 Tbsp garlic powder 1/2 cup chopped white onion Coconut oil 6 eggs
Add all
pancake ingredients together in a bowl and mix
with a stick mixer or whisk (if using a whisk, mash the bananas first).
1) Combine the dry
ingredients (almond flour / meal, tapioca flour, baking powder, salt) in a medium bowl 2) In another medium bowl, whisk the milk, mashed banana, eggs, vanilla extract, and honey together 3) Slowly add the dry
ingredients to the wet
ingredients and mix until combined 4) Pre-heat a non-stick pan and melt a little butter 5) Scoop about 1/4 cup of batter in the middle of the pan to make small
pancakes (the smaller the
pancakes, the easier it will be to flip them) 6) Let the
pancake cook on one side until it automatically unsticks from the pan, then flip it over until the other side turns golden brown 7) Repeat last step until all the batter is used up 8) Serve
pancakes warm
with cut bananas drizzled in honey
I had the same problem
with the cooked
pancakes falling apart, even though I used all the called - for
ingredients.
This is still a pretty basic gluten - free buckwheat - based
pancake at it's core (although the
ingredient list still looks long, the
pancakes are quick to throw together); I just swapped out the yogurt for a little more almond milk
with a splash of apple cider vinegar to imitate the acid in yogurt.
On their own, these
ingredients would never fly in our house, but mixed into a dish
with the word «
pancake» in it, I could get away
with it.
Skip the processed
pancakes with the mystery
ingredients that you can not pronounce and spend the extra time on these
pancakes!

with these two -
ingredient banana
pancakes.
