Whenever I
have portobello or flat mushrooms
on hand I always seem to go to my default recipe - marinated in a sweet balsamic dresssing, grilled, and then served any of a number of ways: sliced
into chunky strips strewn over a salad, squished between a bun with lots of toppings... When I
've found a recipe I love I get it
into my head that nothing else I make with that
ingredient will be as good and so I stick to the tried and tested.

Ingredients: 8 medium ripe tomatoes, I used a combination including San Marzanos / 2 medium red onions, chopped / At least 6 cloves of garlic, minced / Parmigiano - reggiano cheese rinds — scrape away the waxy residue / 1 cup fresh cranberry beans, shelled / 4 cups water / 6 new potatoes, cut
into rounds / 2 small zucchinis, cut
into slices / 1 bunch swiss chard, stems chopped, leaves chopped / Big handful green beans, cut
into pieces / Basil leaves / Olive oil / Salt & pepper / Freshly grated parmigiano cheese / Burrata cheese (optional, but I
had some
on hand).
When you want to use the scrub base, scoop out 1/4 cup
into a small bowl, and stir in enough of the liquid
ingredients (vary it by what you
have on hand — yogurt and milk are best, but water works) to make a paste.
Plus, all you need is two bowls, a whisk, and about 10 minutes of
hands -
on time to throw this together; if you can pour
ingredients into a bowl and mix them together, you
've got this!
Bread pudding is one of my favorites and this recipe is quite similar to my own «method» (meaning that I do not use a real recipe but incorporate what is
on hand with the basic
ingredients) My very, very best version uses leftover, homemade biscuits that
have been split, buttered and toasted... add some dried peaches cut
into small pieces, the plumped cranberries, toasted nuts and usually a chopped apple.

I
'd sit in front of my computer for 5 minutes looking up «vintage luichiny platforms»
on google (if they're not luichiny from the 90 ′ s they're no good), and then I
'd scurry back
into the kitchen to see if I could wing a meal with the
ingredients I
had on hand.
The crust may be made from scratch but, once you
have the
ingredients on hand, it's nearly as easy to mix up as a cookie crust: just toss all the
ingredients into the bowl of a stand mixer, and paddle until it comes together in moist clumps, then press
into the sides and bottom of the pan.
