Why do some recipes say to sift drying
ingredients with cocoa powder in them, and others say to whisk?

I added in 1 Tbsp of
cocoa powder with the dry
ingredients to make this more chocolatey and used canola oil instead of coconut oil, then when I made it I put the mixture into muffin cups and pressed down as hard as I could
with a spoon.

If you find yourself in the same boat,
with big clumps of
cocoa powder in the dry
ingredients that won't mix out, I would suggest sifting so you don't have any clumps.
If you are starting
with blanched almonds (whole, pieces, whatever), you will absolutely need to run those through the food processor
with the
powdered sugar and
cocoa powder (the
powdered ingredients help to keep the almonds from turning into almond butter, too).
And one of the
ingredients is espresso
powder, which adds a lovely fragrant and delicious flavour
with the
cocoa powder.
