Rapid rise or
instant yeast works quicker and is important to use in this method of mixing and rising.

I tried 1/2 wheat flour and 1/2 white flour and tried
instant yeast (which apparently I've been using the bread machine before) and didn't
work out so well.
Active dry
yeast works just as well as
instant yeast, but requires being activated in a little bit of warm water before being added to the rest of the ingredients.
As long as your
instant yeast isn't past the expiration date on the package, it should
work just fine!
(I do this with
instant yeast to ensure that it is alive and
working fine)
Also, today I used
instant yeast, the kind you mix with the dry ingredients and it
worked the same... I think I am safer at using this kind of
instant yeast then the regular one.
I used my rye sourdough starter for stiff sourdough starter for this recipe but I put a dash / pinch of
instant yeast on the final dough because I was afraid it wont
work again, with the help of a very tiny amount of
instant yeast I'm sure it would
work well my bread was soft inside and crunchy outside.
In all reality, you should use an
instant read thermometer if you aren't used to
working with
yeast.
I wasn't sure if these would even
work, as I used
instant yeast (proofed as if it were active dried), Sweet Freedom instead of honey and subbed the eggs with aquafaba.
