I used the garlic salt
instead of the adobo seasoning, but I'm going for the adobo next time.

I added about 1 tablespoon
of enchilada sauce to the sweet potato nacho sauce
instead of the pepper in
adobo (didn't have it) and added a few tablespoons
of nutritional yeast for a more «cheesy» flavor.
Instead of using minced chipotle in
adobo sauce, I went with a spice rub featuring ground chipotle powder.
I made it as directed, except that
instead of using cumin and cayenne, I substituted 1 tsp
of Penzey's
Adobo seasoning, which has cumin and cayenne pepper already in it.

I did not find this overly spicy: I used 2 poblano chili, about 6 - in long each; 3 zucchini, about 8 - in each; 1/2 cup quinoa; and because I could not find the fire - roasted tomatoes with chipoltes, I added a minced chipolte with a bit
of adobo sauce

However,

adobo sauce or wrapping fish with heart - shaped hoja santa leaves like they do in Mexico, Werner rubs the ground spice into skirt steak and brightens mescal - laced ceviche with the chopped leaves.
I did chicken out (or should I say tofu out)
of including the chipotle peppers in
adobo sauce and
instead added in in some drops
of some liquid smoke.
I don't use tomatoes OR garlic, which is apparently unusual... But I love chipotle in
adobo, so I might give that a try

I had to make a few small adjustments — I used only 1 TBSP
of oil to lower the calories, kidney beans
instead of pinto (they were cheaper), regular chilies
instead of chipotles (you can't get chipotles in
adobo here in the UK unless you order them online... You can get the dried ones a little more easily, but I already had fresh chilies on hand), coriander powder
instead of seeds since I had no seeds, and I added a dash
of liquid smoke to make up for the lack
of chipotle smoke.
