This is a recipe that I've known I wanted to share with you for some time, but I had the idea to shake it up a bit and turn
it into a chocolate mint brownie cake.

So, I adapted the sandwich cookies
into thin
mints, and little bites of
chocolate minty Heaven were born.
I made this and added peppermint drops to make a
mint frosting, put that between two layers of
chocolate cake (if you can do chickpeas / garbanzo beans I have a good
chocolate cake recipe for you) then I made tour
chocolate frosting, let it cool a bit and poured and spread over the cake,
into the fridge until the
chocolate stiffened and After Eight cake was enjoyed by all.
Fresh garden
chocolate mint is infused
into this chilled water kefir, making it so refreshing.
Pour
into 2 glasses and garnish with
chocolate covered espresso beans and a sprig of
mint.
* 1 head of cauliflower, preferably organic, bottom trimmed off and separated / chopped
into florets * 6 cloves of garlic, unpeeled * 4 tablespoons olive oil - I used blood orange olive oil, but you could use any fruity olive oil * 2 tablespoons balsamic vinegar - I used a dark
chocolate balsamic vinegar, but you can use regular or aged balsamic, or your favorite mild / sweet vinegar or Meyer lemon juice instead * 1 - 2 tablespoons chopped fresh
mint (or use fresh tarragon, parsley or basil)

Since we're approaching the holidays I decided to make these ones
into vegan
mint chocolate truffles — perfect for taking along to a holiday party or as an after dinner sweet.
Remove from the oven and press a

* 2 tablespoons water * 1/2 cup (1 stick, 8 Tablespoons) butter, cut
into 8 pieces * 1/8 teaspoon salt * 1 cup sugar * 1/4 cup lightly packed light brown sugar * 1/4 teaspoon baking soda * 1 teaspoon vanilla extract * 1 cup bittersweet or semisweet
chocolate chips (or 6 ounces chopped) * 1 cup Guittard Christmas Smooth and Melty
Mints
Pour reserved
chocolate and
mint morsels
into a small microwave - safe bowl.
The
chocolate will set very quick once it comes
into contact with the chilled
mint layer so work quickly.
She dumps a box of
mint - filled
chocolate candies
into a warm bucket of popcorn and lets it get all melty, gooey good.
* 1/2 cup organic sugar for coating the cookies before baking, plus additional 1/3 cup organic sugar (I used Wholesome Sweeteners organic, fair - trade sugar) * 1 1/2 cups organic, all - purpose flour (I used Central Milling Company organic, all purpose flour); I haven't tried it yet, but I bet you could substitute almond flour for a gluten - free version * 3/4 cup cocoa powder (I used Dagoba organic, fair - trade cocoa powder) * 1/2 teaspoon baking soda * 1/2 cup Lyle's golden syrup * 1 large egg white, preferably organic and free - range * 1 teaspoon pure vanilla extract * 12 tablespoons (1 1/2 sticks) organic salted butter, softened * 1/3 cup dark brown sugar, packed (I used Wholesome Sweeteners organic, fair - trade dark brown sugar) * 1 bar / 3 ounces dark

Now chop the
mint dark
chocolate bar
into small chunks (about 1/2 cup total).
The minty «
chocolate like» carob flavor resembles biting
into a light and crispy
mint chocolate cookie, but without refined cane sugar, dairy, caffeine or gmos.
I'm gathering that the preserves are critical but I wonder if there's a way to change these

mint leaves and blending them
into cream and single - origin Ecuadorian
chocolate — stirred
into matcha ice cream with a touch of citrus to bring everything together.
Spoon a little
chocolate custard
into small glasses, then top with a little
mint custard.
I experimented and threw some of the batter with
