I wanted something to dip
into hummus so I sliced this very thin and cut it in fourths and then laid it on a cooling rack on a cookie sheet and put it in the oven.

With the roasted carrot
hummus, you also need to pre-heat the oven to 180C, then cut the carrots
into sticks and roast them on a baking tray with olive oil, salt and pepper for about 45 minutes
so that they're really tender.
For packed lunches I normally make big batches of quinoa and brown rice with apple cider vinegar / lime and salt and then do a big thing of roasted veg — things like sweet potato and squash cubes,
so I throw a mix of that
into a tupperwear with some raw veg — things like avocado, grated carrot, tomatoes and then some
hummus / lentils / chickpeas / seeds for protein.

I love snacking on
hummus all throughout the day, but I thought it would be fun to incorporate it
into a breakfast recipe
so I can get my
hummus fix early and start my day off right.
«Breadsticks» — my kids got tired of sandwiches,
so I made breadsticks by toasting the same gluten - free sandwich bread and cutting it
into strips — this is great for dipping in
hummus or sunbutter, or even just plain.
He's even provided a recipe for Paleo friendly
hummus,
so you can dip the pieces of chicken
into that, or simply eat them solo.
Briny olives and salty feta cheese go
so perfectly with a basic
hummus,
so it made perfect sense to add them directly
into the
hummus.

It truly is
so easy to make your own
hummus and you can control what flavors go
into it.
I think the flavor is
so mellow, when you blend it
into something else — like
hummus for example — you lose all the wonderful avocado flavor.
So, it only seemed natural to bump up the flavor of crusted chicken tenders by whisking some
hummus (use your favorite kind... mine happens to be Sabra)
into the egg dip before dredging the chicken in crispy panko breadcrumbs.
I couldn't get tahini,
so I threw a couple of gobs of
hummus into the dressing, some extra water, a drizzle of sesame oil and some soy sauce instead of salt.

SO gourmet it holds its own as the main event?
Again, you can make
hummus paste at home from organic chickpeas, and yes, it freezes well
so divide it
into small quantities and slowly defrost one whenever the muse grabs you.
The chicken, salad and
hummus don't add many additional carbs,
so it's totally doable to fit
into your macros, although I personally always eat half of it and have extra salad on the side.
I love eating
hummus with toasted pita chips,
so finding a way to incorporate a healthy green like Kale
into it is awesome!
I know these pizza and
hummus are two of her favorite food... groups,
so I thought I would combine the two
into one fabulous food.
