Hi made this loaf last night so I could make
it into meatloaf sandwiches for my husbands 10 hour drive to visit family.
Not exact matches
Half of it made a
meatloaf, which we'll use for
sandwiches over the weekend and half of it
into patties for burgers, which we ate tonight.
We also picked up two pounds of «gyro
meatloaf» which will be made
into lamb meatballs for use in flatbread
sandwiches.
You might recall my Balsamic Glazed Roasted Vegetable
Meatloaf (I actually served these mashed cauliflower and potatoes with it), my Super Healthy Tomato Sauce (that I've used generously in baked ziti and lasagna, and served with meatballs), or my Kale Artichoke Pumpkin Seed Pesto (that I've snuck
into grilled cheese
sandwiches).
Hidden veggies Take a cue from Jessica Seinfeld or Missy Chase Lapine and start sneaking more vegetables
into familiar foods: Finely chopped or pureed peppers, tomatoes, or zucchini can be hidden in hamburgers, pizza sauce, or
meatloaf, or added to
sandwiches and quesadillas — I find that kids are less likely to complain about anything if there's melted (low - fat) cheese on top!
