I made it again today
into 24 mini
muffins (baked for 7 mins) and 10 regular -
sized muffins (baked for 18.5 mins) with some minor changes: added an extra banana, used a mix of half dark buckwheat flour and half white whole wheat flour; decreased brown sugar to 1/4 cup (it was all I had); and used 1/4 cup of maple syrup.
This recipe works well divided
into 9
muffins, which I like, so that I can bake it in my microwave
sized countertop oven (I overlap a pair of 2 × 3
muffin pans to make a 3 × 3) and not heat up the kitchen as much as the regular, big, under - the - stove one would.
I love bite -

In a prepared
muffin tin, scoop batter
into 12 regular
sized muffins.
I put a half English
muffin into a personal
size aluminium pie plate, crack an egg onto it, fresh ground pepper, a few sprinkles of whatever cheese (cheddar, mozarella, provolone), add some chopped crispy bacon or sausage bits, bake till done.
Scoop about 1 tablespoon
sized amount of dough
into the mini-
muffin pan (about 2 tablespoons if using a large
muffin pan).
I used just yellow cake mix, boiled about 2 medium
sized sweet potatoes until tender, mashed them, mix this together, added walnuts, and put
into sprayed
muffin tins.
If I'm serving these to guests I like to make them in normal
sized muffin tins but they can also be made
into mini
muffins and served as finger food for dessert.
The cake batter is poured
into the large cups of a Texas -

Depending on how tall you are or how you carry,
sizing up
into «talls» could also be an option to make sure you have the length to cover your belly — I have a long torso, and I find that buying shirts in tall when available helps me avoid flashing my postpartum
