I just made this recipe last night —
putting into muffin tins instead of a loaf — and I will never use any other recipe again!
When the oven is ready, pour the batter
into the muffin tin so that each of the 12 cups is about halfway full.
Line a muffin tin with cupcake liners and scoop batter
into the muffin tin using a medium ice cream scoop to create even baking.
Divide the mixture into six and use your fingers to push the
pastry into each muffin tin, ensuring the base and sides are evenly covered up to the top.
Gently fold carrots (+ walnuts, raisins, etc) into the mixture and spoon batter
into muffin tin coated with butter, oil or cooking spray.
Simply cook the quinoa and combine it with tomato sauce, cheese and your favorite pizza toppings,
portion into the muffin tin and bake.
Take 1 1/2 - inch balls from the pizza dough and
press into each muffin tin, ensuring they are pressed up into the sides, as well.
