You already know how I love my roasted popcorn cauliflower bites and how easily it integrates
into a vegan cheese sauce, but if you haven't already been turned onto the cauliflower «rice» craze, now's your chance!
I am intrigued by all the fun things being put
into vegan cheese sauces.
This is my first foray
into vegan cheese and I am absolutely blown away at how good it can be!

Watching fellow Super Bowl celebrants dive
into a bowl of processed
cheese queso years ago, a natural foods chef (who had upgraded her vegetarian diet she'd been living for decades to a full
vegan one out of compassion), had her «Aha!»
With a sprinkling of
vegan cheese, she magically turned it
into Baked Spinach Artichoke Dip.
You can also dip the edges
into chives, chili, lemon zest or some
vegan cheese.
P.S. feel free to add even more
vegan parmesan
cheese or mozzarella shreds
into the mixture.
You can serve these eggplant meatballs atop spaghetti and marinara (my personal fav), place them
into a toasted sub with some
vegan cheese and marinara as Chris did here on his Instagram, as appetizers with a toothpick and a drizzle of marinara, in minestrone soup, in a salad... the list just goes on and on!
When you cook shredded cabbage until very tender in your favorite pasta sauce and then top it with a sprinkling of your favorite parmesan
cheese (try this
vegan version if you like), it's transformed
into a comforting dish that has the classic flavor of spaghetti.
It's really as simple as spooning the
vegan cream
cheese into a bowl, add the green chili enchilada sauce, some nutritional yeast flakes, and garlic powder and then heat that up in a microwave for a few seconds.
I think I could incorporate a lot more
vegan meals if I just embraced the ingredients as they are, instead of trying to turn them
into some kind of imitation of a meat /
cheese / etc.
Scoop the
vegan cream
cheese into a microwave save bowl and microwave for about 11 seconds.
I'm
vegan and By replacing the chicken with tempeh and the
cheese with Daiya
cheese, and the sugar with sucanat, I turned this
into one of my all time favorite dinners for my family!

I love that so many more pizzerias these days are embracing

vegan appetizer by leaving out the prosciutto and Parmesan
cheese.

I have been working towards a
