This reminds me of those delicious spicy Indian curries from the cast
iron pans that they serve
at restaurants.
Additionally, I had created the recipe before I owned my beloved cast -
iron skillets (or any oven proof
pans at all) and so it required a transfer from
pan to baking dish that made the recipe lengthy, messy, and not
at all non-stick in the end.
Heat up a heavy bottomed
pan or dutch oven (I used a cast
iron frying
pan) with the oil on medium high heat — on my electric stove this was
at the 6 1/2 mark, and it took a good 10 - 12 minutes or so to heat up.
We did the oven method and then cooked them on the grill
at the park, pouring the batter into a cast
iron pan and then flipping the crepe onto a pizza stone to brown the other side.
I arrange them cut - side down on my heaviest, darkest sheet
pan (a cast
iron skillet is also good) and roast

Anyway, the pancakes aren't really pancakes
at all and I knew this right away when I dumped the first batch into a hot cast
iron pan.
I cooked them in a cast
iron pan with a little butter (well, Earth Balance, actually),
at a low heat for awhile, so they would cook through to the middle without burning.
It was a little scary pouring the boiling water into the hot cast
iron pan on the bottom shelf... you kind of get a loaf of bread and a facial

iron and bakes it
at a high temperature so the oil penetrates the
iron.
This process creates a nice seasoned
pan to get started with, but for a real, authentic patina, it's still crucial that you maintain your cast
iron and keep it clean and well oiled
at all times.

• Roast your tomatoes in a cast -
