A seasoned cast
iron pan works great here.
Thick bottom or cast
iron pan works the best.
Put the chicken in an oven - proof skillet (a cast
iron pan works well for this) surrounded by carrots and garlic.
The cast
iron pan worked wonderfully too.
Weight the sheet with heavy objects; hardcover cookbooks and cast -
iron pans work really well.
Not only do well - seasoned cast -
iron pans work just as well as your favorite nonstick ones, but you'll also get an extra dose of iron in your food.

iron pan but I imagine that it would
work well too.
I like to bake mine in a cast
iron skillet, but a pie
pan will

I use an old pizza
pan as a lid for my largest cast
iron skillet and found some odd covers at a thrift shop that
work for my other sizes — I currently have FIVE different sizes of these wonderful skillets since I use them for all kinds of recipes.
** If you don't have a cast
iron skillet, I bet this would
work great in a 9x9
pan.
OK — after doing some research, it seems a large cast
iron pan would
work better than a wok.
Heat a crepe
pan or medium size nonstick skillet (I use an enameled cast
iron skillet - heavy but it
works great) to medium heat.

works great so you don't need anything special just something you can lift easily.

The secret to a great sear is to have a fairly hot (not scalding), dry (preferably cast

pan; rub some oil, salt, and pepper on the meat you're searing (this
works particularly well with ahi); and lay it in the
pan.
For the Tataki: Season the beef with salt and pepper and then sear quickly in olive oil on all sides over high heat in a heavy

iron content (i.e. not ceramic, glass or aluminium).
I don't miss it at all because the cast
iron pan, if used properly,
works just as well as a non-stick one.
Go for non-coated
pans instead, such as cast
iron, which
works wonders when used properly.
