jacket potatoes in the slow cooker — this may well be one of my best discoveries in slow cooker cooking, being able to throw some big old potatoes in there, walk away and do nothing else, is quietly liberating (find my twice baked goat's cheese potatoess here).

I find the
jacket potato here
in the UK a bit boring.
Perfect served
in jacket potatoes topped with cheese and sour cream or added to tacos, enchilada and nachos for a Mexican twist.
It's rich, creamy, high
in protein and can be served so many ways — as an appetiser with pita chips, crisps or crudites; as a sandwich spread; smeared all over a
jacket potato, as a sauce for pasta,
in a Buddha Bowl, or even as a main course — just top it with olives, chopped tomatoes, cashews and whatever else you fancy, and served with hot Arabic bread to dip.
Here we had it with rice but it would be great with pasta or
in a tortilla wrap or with quinoa or a grain like millet or farro or piled into a
jacket potato.
Jacket potato is something you get a lot
in the UK and is canteen staple where I work, yet I've never been drawn to it.
For these, simply bake the sweet
potatoes in their
jackets (see loose method above), let cool and halve.
Your first project: Learn to boil
potatoes in their
jackets.
Stuff the mixture into pita bread pockets; serve
in a wholemeal roll; or pile on top of a baked
jacket potato or toasted Turkish bread.
There are very few times during the day when there isn't something to eat on offer, whether it be breakfast, pizza by the pool, lunch
in the restaurant or allegro overlooking the pool who then go on to serve
jacket potatoes, pancakes, ice cream and then afternoon tea and cakes, then dinner, then unfortunately nothing until 11.30 pm midnight snacks!!!! Drinks are plentiful and proper Coke etc although the cocktails did all taste the same but that sometimes depended on who made them.
• Frittata with salad • BBQ steak, chicken or lamb fillet with small
jacket potato and green salad • Roasted lean beef or lamb with veggies roasted
in separate dish and greens served with mustard, relish
• Fish with steamed vegetables and
potato in jacket.
I really don't like oats (unless they're
in haggis or black pudding)-- porridge is sticky and slimy and nasty, I much prefer
potatoes — they are my main carb «vice», preferably baked
in their
jackets, with lots and lots of butter

jacket potatoes, salads, beans, fresh coleslaw and bread.
Or perhaps you have just got
in from an evening at the library, and come through the door intending to make yourself a quick
jacket potato and watch some Big Bang Theory on E4.
Defrosted bread was fresh, not soggy, while a large
jacket potato cooked using microwave - grill combi was surprisingly crisp - skinned yet fluffy inside, cooking
in just 13 minutes.
We had a great time with Pinky and her gorgeous hubby Scotto, who cooked the most delicious snags on the barbie, while Pinky telepathically sensed that DD had been craving
potatoes in the
jacket with sour cream for MONTHS and served them up on the side.
