I, too, wonder about things like BPA, etc, etc... I think that you would probably be safe with turning the mason
jar lid over.

Once you have pressed all the cabbage into the

lids will not fit
over the nipples, because of the colors (mason
jar rings) they are too wide and ribbed.

You can either combine the herbs and the olive oil in a
jar with an airtight
lid and leave 3 - 4 weeks, shaking daily OR heat the herbs and olive oil
over low / low heat in a double boiler for 3 hours (low heat!)
Place cheesecloth or unbleached parchment paper
