jerk sauces and marinades range from the early, simple pastes of three or four
ingredients to the more modern and rather complicated concotions with as many twenty - one
spices, herbs, and vegetables.
Ingredients: Pineapple Juice Concentrate, Habanero Peppers (habaneros, salt), Water, Tomato Paste, Natural Pepper Flavor,
Jerk Seasoning (sugar, salt, garlic, onion,
spices, brown sugar), Chipotle Puree (chipotles, water, salt, citric acid), Lime Juice Concentrate, Lemon Juice Concentrate, Potassium Sorbate and Sodium Benzoate (to preserve freshness).
It is used in Jamaican
jerk seasoning (the wood is used to smoke
jerk in Jamaica, although the
spice is a good substitute), in moles, and in pickling; it is also an
ingredient in commercial sausage preparations and curry powders.
There are literally thousands of different
jerk spice recipes, but everyone agrees on two key
ingredients: allspice (Jamaican pimento) and habanero (Scotch bonnet) peppers.
