I bet that it would take really well with
jicama as well!!
I have often used
jicama as a substitution for potatoes in latkes or hash browns and it worked beautifully in this recipe as well.
If you pour lemon juice over the sunchoke /
jicama as is done in the recipe, they won't turn dark.
Note: you can also use a large slice of
jicama as a tortilla as well!
