I'm much more wary of
the jicama at my salad bar now!
I ate
some jicama at lunch that tasted a liiitttlllee off but didn't think much of it until a few hours later when I got sick, during class, for the first time in 5 years!

a JICAMA at South Melb Market!

I'll be talking about all that in a later post I never thought to juice
jicama, but now I have to try that
at home sometime!
Tip: They will cut and dice a
jicama for you
at Whole Foods for no charge.
Make the corn muffins a day or two ahead and refrigerate then leave out
at room temperature with the Kale,

Just go grab the largest
jicama you can find
at the grocery store, give the outside a good scrub, then patiently slice thin «tortillas» out.

I was first introduced to
jicama when I used to work
at this restaurant called «Lettuce Souprise You» when I was in college — I used to dunk it in chili back then — but this salad sounds way way better!
There are a few vegetable fermentation recipes in the recipe chapter
at the back of the book — brine, spiced brine, basic sauerkraut, spiced asparagus, sweet cippolini onions, kimchi,
jicama pickle, pickled garlic, pickled salsa.
Another option is to buy the pre-chopped
jicama sticks
at Trader Joe's.
