I've never cooked with
Jicama before either but I love eating it out.
I squeezed the water of of the cabbage and
jicama before using, otherwise it might turn out soggy.

Some of my
jicama fries, after baking, did become soft all the way through, but just to let you know
before hand, most will be soft on the outside and slightly crisp on the inside.
Jicama is quite moist, so it needs a thorough drying
before being incorporated with the cucumber, olives, and sun - dried tomatoes.
For the last couple weeks it's been
