As much as we all love fruit pies, cobblers and cakes, perfectly
juicy fruit (peaches, rosy
berries, taut cherries) is often better left naked and raw, maybe spooned onto a scoop of ice cream, a buttery shortcake biscuit or a slice of poundcake to add a sweet and luscious
note.
Note: you can sub out any fruit you like with this tart, although softer fruits likes bartlett pears,
berries and
juicy stone fruits are my personal favorite.
Notes I've made the same recipe using blueberries and raspberries as well — and to fruits that are less
juicy than strawberries I suggest adding a tablespoon or two of water with the mashed
berries before you start so the chia seeds can absorb more liquid, and become even more gel - like.
