Hi Holly If using quinoa it would be quinoa flour so you just do the same as with buckwheat flour.

Hi Kelly, I just used buckwheat flour but you could use brown rice or whatever other gluten - free grain flour you have kicking about and yes the crust could definitely be used for other fruit (or chocolate!)

There isn't a particular brand which I use, I just buy organic buckwheat or brown rice flour which are both gluten free.

But I just added a little more buckwheat flour, baked them for about 27 min and they taste great, although not as «fluffy» as I had imagined.

Hi Ella — I just made these for the third time and used Cashew Meal instead of the Almond meal (just because I had it and wanted to test if it would be good) and also went back to the Brown Rice flour instead of the Buckwheat (personal preference — just a milder flavor) and they came out AMAZING again.
I've never had that with the recipe - sometimes the flour sinks to the bottom of the mixture a little so the first one can be too runny so make sure to stir just before pouring or you could try adding a little but more buckwheat flour!

Given that the recipe for these buckwheat crêpes was already 75 % gluten free, I just substituted the last 25 % of AP flour for my generic all - purpose GF mix — it was perfect!
But once that is totally out of the equation, you can incorporate flavors to your baked goods just by the choice of flour you use — suddenly you can choose from hazelnuts, almonds, coconut, quinoa, buckwheat, gosh the list of choices goes on and on and on.

I often replace rye flour with that combo or just with straight buckwheat flour.
I've used only minor substitutions for preferences and just what I had: left out the walnuts, used sorghum flour instead of buckwheat, and used maple syrup in place of both the dates and the honey.
