Just a sidenote on Mojitos, I recently tried cutting up small pieces of
fresh lime and muddling it in with the mint and I was hooked!
Just imagine: tangy bell peppers, sweet grilled corn,
fresh succulent tomatoes, rich earthy black beans, pungent red onions and scallions meet creamy avocado dressing spiced with cumin and acidified by freshly squeezed tangy
lime juice.
I think
just a little less chilli (not for me) I used lamb, cooked quickly and made a
fresh salsa (red onion, red chilli, tomatoes, with
lime and coriander), guacamole, cheese and tabasco on a soft flour tortilla.
The Vietnamese version of chicken soup is
just as comforting as the American one, but it's infused with ginger and
lime, and it's served with rice noodles,
fresh herbs, bean sprouts and fish sauce.
The combination of
fresh watermelon puree, mint simple syrup,
lime juice, and rum
just screams «summer.»
I mean the variations are endless,
just the beginning being
fresh vs. canned tomatoes, jalapeno vs. serrano peppers, vinegar vs.
lime juice, white vs. yellow vs. red vs. green onion, and on and on.
To plate, I recommend heating up a couple grain - free tortillas (or corn, if you tolerate them), layering with a scoop of Chunky Mexican Coleslaw, adding a few pieces of blackened fish, and then topping with
fresh cilantro, jalapeno (if you like), maybe a sprinkle of
fresh lime, and
just a small pinch of sea salt.
Then added the
fresh cilantro and
lime just before serving.
Just toss the vegetables with some
fresh squeezed
lime juice, a little oil, and some salt and your good to go.
If you want to freshen up the recipe for Day 2,
just squeeze some extra
lime juice into your bowl and garnish with
fresh cilantro.
Our other go - to weeknight meal at my house is to saute some chicken thighs — mostly
just with olive oil, salt, and pepper — warm some corn tortillas directly on another burner, smash some
fresh avocado onto the tortillas, squeeze a little
fresh lime juice over the avocado, and top with the chicken, for the easiest, basic - est chicken avocado tacos.

They do have a slightly odd texture straight out of the package, so I suggest baking them in the oven with

just having them raw.

just added a drop or two of agave nectar to round out the tanginess of the

It can definitely be made in advance the day before —

just diced up a tomato, a handful of cilantro, 2 green onions, juice of 1/2 a
