When we need more, I
just put the frozen batter into a
greased muffin tin and bake them for 5 - 10 minutes longer than normal - they turn out great!
I baked mine in a
greased mini
muffin tin,
just like the
muffins that The Artesian Restaurant served.
We suggest using a silicone
muffin tin and lightly
greasing it for the best results, however, the recipe also works perfectly in a normal
muffin tin with paper liners (they
just make it easier to get the cupcakes out in one piece!).
When I come into possession of a cast iron or glass
muffin tin, I will try
just greasing them and putting the batter in directly.
Pour the batter into the
greased muffin tins, filling
just about to the top.
