I only had 9 paper liners, so 3 of mine were
just in the muffin pan, I was afraid they would not come out clean, but to my surprise they did.

Also, my loaf
pan wasn't big enough so I made some little «mini
muffins»
in small cup cake silicone moulds, and cooked them
just half an hour, they were also nice.
If you prefer smaller
muffins,
just use a standard size 12 - cup
muffin pan and bake the
muffins for 15 - 18 minutes, or until a tooth pick inserted
in the middle of the
muffins comes out clean.
You can also use the buns for sandwiches throughout the week (
just bake them
in a loaf
pan, instead of a
muffin pan).
The process is
just like making cinnamon rolls except rather than baking them side by side these are baked
in a
muffin pan for stand - alone mini babka cakes.
These
muffins are huge
in size, I have a special giant
muffin pan for baking them
in and this batter gives you
just the right amount for 6 of them.
But fear not and don't go rushing out to buy a new
muffin pan, these are
just as delicious when baked
in normal
muffin pans.
If you don't have a mini
muffin pan, you can of course put these
in a regular
muffin tin, you'll
just have to increase the cooking time.
They rose so high
in my 12 count
muffin pan and turned out
just gorgeous.
I
just used baking spray (the cooking spray that has flour) and let the
muffins cool
in the
pan long enough.
I made these
in a 9 × 13
pan, rather than the
muffin tin (was
just making them for myself, so I wasn't concerned about presentation), and baked it for about 30 minutes.
I've also made these buns
in muffin pans, but I
just love how nicely they bake together
in the skillet.
If you use a
muffin pan,
just butter it well and only put a heaped tablespoon of batter
in each well
in the
muffin tin.
I baked them
in muffin pans at 425 and
just kind of kept an eye on them.
I
just made these as «brownie bites»
in little mini
muffin tins because I couldn't find my square
pan.
(you do not need to use a
muffin pan, but you could) You can
just place them on a flat surface that basically will fit
in your freezer.
Just take out the peanut butter, add a cup of blueberries, and make

muffin pan instead of a bread one!
Speaking of oil, as you know, I eat and live by an oil - free diet for the variety of benefits I've experienced from it, but sometimes, such as
in baking, there comes a need for a classic non-stick spray to coat the
pan (s) with to give baked items, such as
muffins, that nice slightly browned exterior crust that paper liners
just can't provide.
You can actually make this recipe into mini
muffins:
Just double the ingredients and bake them
in a mini-
muffin pan at 300 °F (150 °C) for 10 minutes or until a toothpick inserted
in the center of a
muffin comes out almost clean.
Just wanted to add that I made these
in a * mini *
muffin pan and at 13 minutes they came out soft on the outside, no crust effect (good for teeny kids), and at 16 minutes they started to have a little crunchiness on the outside (nice for adults if eating hot).
I made lastnight
in a mini
muffin pan & they turned out great I
just cut little holes
in them and flattened them out a little so more of a doughnut look, everyone loves them!
I haven't tried making it
in a loaf
pan though because I
just think
muffins are easier and more convenient.
Just baked these scrumptious
muffins in my newly purchased KAF mini
muffin pans.
Oh, and if you're more into large
muffins, you can
just make them
in a larger
muffin pan.
My 3 Y / O granddaughter and I
just made 2 batches of these with whole oats and whole oat flour, butter (not oil), fresh blueberries and raspberries, one batch into
muffins and the other
in a bread
pan.
Just multiply everything by 4 and either bake them
in 12
muffin cups or
in a loaf
pan.
