Sometimes we all
just want something amazingly quick and easy for dinner, at this point I often go straight for
avocado and hummus
on toast, which is amazing, but sometimes it's nice to spend an extra few minutes in the kitchen and whip up something amazing like this beautiful veggie stir fry with a creamy tahini and tamari sauce and a mountain of delicious buckwheat noodles.
Hummus and
avocado toast can be so great but they're not very portable so I'm really excited by this new nut recipe, as I can
just put a little pot of them in my bag and munch
on them as I run around throughout the day.
However, if you have diabetes / pre-diabetes and you are including bananas as part of a whole meal then I would
just balance them with some healthy fat (
avocados, nuts, etc.) You could have a banana
on top of a piece of sprouted whole grain
toast with some almond butter and that would be a good option.

Recently my dude and I have been consciously making an effort to cook «more exciting» breakfasts / brunches
on the weekends, other than scrambled eggs and
avocado toast (nothing wrong with that of course, but sometimes you
just need to change things up) and we started last weekend with these Brown Sugar, Blueberry and Coconut Pancakes!

avocado toast sandwich from frog hollow farm
on board for lunch and dinner.
If I'm in a hurry, I

I fry or poach an egg I
toast 2 pieces of sourdough bread (use whatever bread you'd like that's
just my fave) instead of butter etc I use coconut oil then I mash up whole or half an
avocado depending
on how hungry I am squeeze some 1/4 lime or lemon into avo spread it
on top of the
toast and sprinkle salt and pepper as well as some pine nuts (or anything else you'd like to top it with) and when I have tomatoes I like to cut up a few and add them as well.
Sure
avocados are trendy, but when the buttery fruit is spread
on toast, all bets are off (seriously,
just search #avocadotoast
on any social media platform).
