I'm normally low
carb as well as grain / gluten free, but
on occassion, I need something better that Almond and Coconut flours
just can not provide
on their own.
I've
just gone paleo, like, two weeks ago (after a brief transitional period of trying low
carb and getting sick of recipes using artificial sweeteners and crap wherever I looked), and am still very much in the reading - up - phase, and more or less re-learning to cook without trying to focus
on «substituting», but more
on using what I've got and what I know will be good for me.
I would definitely make it again; especially
on those days when I
just want a sandwich (low -
carb makes that hard).
Funny — I'm
on a low
carb diet and I have the energy to function
just fine.
And
on the side I had a low
carb spinach and cheese wrap —
just 1/2 a cup of baby spinach, 1/2 ounce of cheddar and melted in the broiler.
It's good because it's light, easy to make, low
on the
carbs, full of protein and um... it
just tastes good.
